Noma reopened in Copenhagen on August 5, 2026. But this reopening is more than a simple return to service. Founder René Redzepi has stepped back from daily operations, while leaders who developed within Noma are beginning a new structure that divides responsibility for the kitchen, research and development, and management.

How Has Redzepi’s Role Changed?

Redzepi has not left Noma entirely; he is taking on the role of creative director. He is stepping away from the center of day-to-day restaurant operations while remaining responsible for the restaurant’s creative direction.

Noma announced the following new leadership team:

  • Pablo Soto: Executive Head Chef
  • Mette Brink Søberg: Head of R&D
  • Annika de Las Heras: CEO

Pablo Soto reportedly began at Noma as an intern in 2017, later worked at Noma Mexico, and has led Noma’s kitchen since 2023. This change can be understood as a shift away from founder-centered daily operations toward a structure in which leaders who grew within Noma share responsibility for the restaurant’s floor operations, research and development, and management.

The key point is not the founder’s departure, but the change in who runs Noma’s day-to-day operations.

From Three Seasons to 12 Seasons

Noma has announced that it is moving away from its previous three-season operating model and adopting a 12-season format, with a distinctive expression presented each month. The central change, therefore, is a menu experience that varies depending on when guests visit.

Noma closed its Copenhagen restaurant in January 2026 and returned to Copenhagen after running a pop-up in Los Angeles. This reopening marks both that return and the beginning of its new operating model.

Reopened, but Not in the 2026 Michelin Guide

Noma is not included in the 2026 Michelin Guide. The AP reported that its operating period in 2026 was not long enough to meet the guide’s requirements. This applies to the 2026 guide and should not be expanded into a prediction about future re-inclusion or star status.

According to an AP report dated July 29, 2026, the first three months after reopening were nearly fully booked through the end of October, with the menu priced at 4,500 Danish kroner per person and a wine pairing available for an additional 2,000 Danish kroner.
