# Noma Reopens in Copenhagen on August 5… Redzepi Steps Back as It Launches “12 Seasons”
The world-renowned restaurant Noma reopened in Copenhagen on August 5, 2026. The key change is not simply a chef replacement, but a shift from founder René Redzepi’s day-to-day leadership to a new operating team.

Redzepi Has Not Left Completely
According to the Associated Press, Redzepi announced in March 2026 that he would step back from operating Noma. At the time of the reopening, he serves as creative director. Noma’s official website also does not present Redzepi as the new leader of day-to-day operations; instead, it explains that new leaders are running the restaurant.

- Mette Brink Søberg: Head of R&D
- Annika de Las Heras: CEO
Therefore, it is more accurate to describe this change as an organizational restructuring centered on three roles rather than as an operation led solely by Pablo Soto.
From Three Annual Seasons to 12 Monthly Seasons
Noma’s official reservations page introduces a menu rhythm of 12 seasons that change monthly instead of the previous three annual seasons. In other words, the restaurant is moving from a model organized around broad seasonal periods to one focused on monthly changes.
The Copenhagen 2026 season prices listed on the reservations page are DKK 4,500 for the menu, DKK 2,000 for the wine pairing, and DKK 1,500 for the juice pairing.
Not Included in the 2026 Michelin Guide, but No Permanent Loss of Stars
The Associated Press reported that Noma would not be included in the 2026 Michelin Guide. Noma explained that it had not operated long enough in 2026 to meet the guide’s requirements.
This explains why Noma was not included in the 2026 guide and should not be interpreted as a permanent loss of its Michelin stars.
